Before it gets too late, now is a great time to reap the rewards of fresh summer produce. If you aren’t into canning, freezing is another great method to enjoy fresh fruits and vegetables all winter long. I used cherry and grape tomatoes, but the same concept could be used for things such as strawberries, blueberries, mushrooms, etc.
1. Spread tomatoes out on a sheet pan so they are not touching.
2. Place sheet pan in the freezer overnight.
3. Transfer frozen tomatoes into tupperware, storage bags, or jars. Just make sure it is airtight!
When you are ready to use your tomatoes simply take the amount you need out of the freezer and let them thaw out. They will not stick together, and are easy to portion, if they are frozen using the method above.
