Machine Shed Recipe: Pumpkin Bread

Nothing says Fall like this recipe for Pumpkin Bread, which would be a delicious Thanksgiving Day breakfast treat.

Ingredients:
2 cups Eggs, Beaten
1 cup Water
2 cups Salad Oil
1.5 lb Canned Pumpkin
2.5 lb Sugar
2 lb Flour
½ oz Baking Soda
¼ oz Cinnamon¼ oz
¼ oz Nutmeg
1/8 oz Salt
Instructions:
1. Mix eggs, water, oil, and pumpkin in mixer.
2. Mix in remaining ingredients and mix for 4 minutes.
3. Pour into greased pan or muffin tins
4. Bake at 350º for 45 minutes to 1 hour for pan or 35 minutes if you are preparing them as muffins.

Just checking about the ingredient amounts. These #s seem very big…almost 6 cups of sugar?, except for the eggs…only 2? Could you verify?

The recipe is correct. It says 2 cups of beaten eggs though not 2 eggs.
